ED
OWNER / CHEFEd grew up in California, where he learned to cook by studying with some of the greatest chef-teachers ever: his family. Ed has since worked as an executive chef and consultant for some of the leading Japanese restaurants in Seattle: Japonessa, I Love Sushi, Nikko Restaurant and Wasabi Bistro. Ed founded The Sushi Shop in 1996 with the goal of taking his unique interpretations of traditional Japanese foods beyond restaurants, because sometimes that's just a lot more fun.
In addition to The Sushi Shop, Ed is currently opening a Japanese style burger joint, Katsuzilla, located in the Uwajimaya food court. In his (very limited) spare time, Ed loves to hang out with his wife and daughters, play video games and watch movies. True to the city, you can always find him cheering for the Seahawks and Mariners. |
TAKASHIEXECUTIVE CHEFTakashi moved to the States from Tokyo when he was 25 years old. He has worked at a variety of restaurants in the Seattle area, including I Love Sushi, Shiro's, Wasabi Bistro, and Wolfgang Puck, and was the proud owner of Rain Sushi in Wallingford. Takashi's background includes a broad Asian influence that extends beyond Japanese cuisine into Chinese-Western fusion and Vietnamese cooking. Along the way, he became good friends with Ed and is very excited to be the executive chef of The Sushi Shop.
When he isn't working, Takashi enjoys spending time with his wife and is very proud of his daughter, who recently went off to college in Japan. He also enjoys playing guitar, listening to music, and cooking great meals for his family and friends. |
