MEET OUR TEAM
OWNER / EXECUTIVE CHEF
Ed grew up in California, where he learned to cook by studying with one of the greatest chef-teachers ever: his grandmother. Ed has since worked as an executive chef and consultant for some of the leading Japanese restaurants in Seattle: Japonessa, I Love Sushi, Nikko Restaurant and Wasabi Bistro. Ed founded The Sushi Shop in 1996 with the goal of taking his unique interpretations of traditional Japanese foods beyond restaurants, because sometimes that's just a lot more fun.
In addition to The Sushi Shop, Ed is currently opening a Japanese style burger joint, Katsuzilla, located in the Uwajimaya food court. In his (very limited) spare time, Ed loves to hang out with his wife and daughters, play video games and watch movies. True to the city, you can always find him cheering for the Seahawks and Mariners.
Takashi moved to the States from Tokyo, Japan in 1992 and kicked off his career at I Love Sushi in Seattle and has been delighting guests with delicious sushi for the past 25 years. Takashi has developed his skills working at some of Seattle's top Japanese restaurants and has many years of catering experience. In the late 90's, Takashi expanded his culinary skills while working at the Wolfgang Puck Company with Western/Chinese and Vietnamese cuisine as his specialties.
